Well, New Year’s Day has come and gone and 2020 is started. Did I make any resolutions? Only one: to get more sleep. So many people do not get enough sleep and I know that I am one of them. Somehow, I would like to make sure that I get at least 7 hours of sleep each night. I usually get 6 hours and occasionally I’ll have to make it through the day on 5, but the other night I was only able to get 4 and that was a killer day. I was in such a fog. So, I figure if I can get at least 7 hours of sleep each night, I’m setting myself up to have a more productive day and more energy to do the things I love.
School is back in session. I’m so ready to be done. I have one more year to go and then I’ll have my degree. I’m working towards a B. S. in Accounting and I’m doing it while working full-time so it’s been slow going. I feel like I’ve been at university forever! Okay, maybe not forever, but it has been a long time and I’m very grateful that there’s finally a light at the end of the tunnel. As my husband says, “Let’s hope it’s not the express train.” š
I’m off to bed for now but I thought I’d share a pic of one of the wonderful desserts that I made for a dear friend when she left our company. It turned out so well that I just had to take a picture of it. Feast your eyes on this beauty:
That is a genoise cake with strawberries and whipped cream. It was the perfect summer dessert. The cake was delicate, the strawberries were perfectly fruity and the whipped cream tied it all together deliciously. Not too heavy and lightly sweet. And the chocolate shavings added some complexity to the taste. Best of all, I had so much fun making it!
